Birthday HUGE turkey

Thread Starter
My mom's 75th birthday is sunday, but we are celebrating it tomorrow
she is having ham and turkey, i said i would do the turkey

here is the monster in the cryo-pac......just under 19 pounds

the brine.......molasses based, with half the salt. I soaked the bird for a couple days to try and remove most of the factory brine, hence half the salt. I did last turkey day turkey this way and it was out of this world. I also injected this bird with the brine, like the last one.

outta the brine, and draining. you can see where the brine colored the skin brownish

sittin pretty, on a 40 oz bean can. Thankx smokin steve for the idea, so i wouldn't have to split this bad boy. you can also see where the turkey rested up against the cooler. It didn't get the color

here it is, sitting in the smoker. I dusted it with corn startch, from a idea of CinnamonKC, thankx for the idea. we will see if it helps with crisping up the skin.

outside temps are 46. cloudy, with lite sprinkles.......fingers crossed

more pics to come

Let us know on the skin. That is why I am shying away from birds in general. Can figure out the skin, smokers not hot enough. What kinds smoke?

I believe your weather is on its way over here, should be ok.

hey dom........summin like THIS?

thankx cinnamon, that was you......i will give you creds in the orig. post

chargrilled.........yeah.......birds and smoking don't werk out, unless you smoke at higher temps, such as in the 300 degree range. You can also throw it on the grill to crisp up the skin, or under the broiler for a bit. AJthepoolman, sez mayo will also werk. I tried that once, didn't werk for me, so went the cornstarch way.

Growing up in an Irish Catholic family we heard 'em constantly. Grandma and the folks had one for every occasion. Now they get to drive my son nuts!! :0-)
Half the time he has to come ask me what they meant!! PDT_Armataz_01_28.gif

Hey Dude, glad you got the bird propped up on a can so you didn't have to split the thing, although the q-vue of you splitting it with the axe would've been classic! PDT_Armataz_01_36.gif

I echo Eric on the cherry juice ... interesting touch.

How many people you feedin? Hope people bring some doggie bags!
