Jusy wanted to share this, with somebody that cares because people here at work for some reason do not, Ok I took some boneless chicken breast, because of the uneven cooking since the breast are different thickneses, i pounded the chicken to about 1/2 inch think, put in brine one hour, then grilled about 5-7 minutes each side, was the best and moist chicken breast ever, served on a grilled bun with, avocado, green chile,red onion, bacon and swiss cheese

I am a huge avocado fan, I think it is often overlooked as a sandwich topper.
 
That does sound good.

I just did my first breast last weekend... delicious! I had a nice "whole" breast marinading in chili/lime that I got from my butcher. I decided to try his method, which was to cut a slit into the thick part of the meat and stuff a good size block of cheese in there, then top the breast with a few thick slabs of smoked bacon. Holy Cow! They were moist tasty. These things were so big I was able to bag and freeze half the breast for another meal. Just now finding out that poultry is fun too.
