I have been hanging around here for a few weeks now but have not introduced myself yet.
I have been a casual smoker for about 15 years, having good success with a few things but more disappointments. Since starting to read posts on SMF I am learning that the problems I have had are common and that there are easy solutions.
My first smoker was a charcoal burner with offset fire box. It came from Sams Club and has no name plate on it but looks like some of the pictures of Brinkman units. I always have had trouble getting any sizable piece of meat up to the recommended internal temperature. I have started making mods on this unit.
Yesterday I brought home a Camp Chef 24" gas smoker.
Other hobbies include: brewing, garden railroading, bee keeping and cooking.
I am a Mechanical Engineer by professing.
