well started with a 3lb. brisket that the wife got at the store. not as much fat on it as i would of liked. But hey, will smoke it anyway. it does smell good. Spitzin with captain morgans, apple juice, and cointreau.

Looking good man!!! I am considering making a UDS for myself. Even moreso after my neighbor had 4 of them dropped off at his house on friday evening.

He owns some kind of insulation and siding company and has access to all of the empty barrels. I have no idea what he is going to do with 4 of them...he doesnt cook. Maybe storage or something. All I know is that I am going to take him some Q and ask for one.

Great looking brisket, I like the idea of having a UDS; just not sure what kind of drums are safe to make them out of.....oil barrels or what?
 
I was wondering the same thing mossy. My thought is that nothing good for you usually goes into a 55gal drum, so there must be a way of cleaning them for food safety. I need to do some more research on this topic.
 
ask for a food grade barrel, like nuts or juice .They have an inner liner that you need to burn off, after that assemble an cook. I had a problem with mine getting to hot but with the advice on here I was able to fix it.(exhust pipe to long ) Ya me and the old lady ate the whole thing!

Find a drum, burn that puppy out GOOD. We're talkin' a HOT fire. It should burn most of the paint off the outside of the drum.
Only drum I might not consider would have a radioactive logo on it.

It might cook stuff without fire in it.
