When cold smoking sausage, the links usually cross each other at the bottom. If you smoke them like this and leave them til they are done, there will be a "BALD" spot in the smoke. (you will see the color is dif). Some people will go and switch the links to cross the opp. direction half way through the smoke. What I like to do is use a double pointed toothpick and place into the sausage. This will hold the link from touching itself, therefore no "BALD" spot in the smoke.
