I have 4 butts in with some ribs, they been on about 3 hours now and already at 128 and 135 in the two I have the thermos in, also the smallest. Smoker temp has been between 235 and 250.
 
how are you measuring smoker temp?? Stock guage? What temp was meat to start with - out of fridge or counter warmed first?
 
Oregon Scientific AW131 to check smoker temp. I let the meat sit out for an hour before going on. 4.5 hours now at 161 and 168 after foiling on the smaller two the largest one is only at 110 and the next one down is at 130.
