Hey everybody,

My name is Dave and I live in Northern California. I am new to smoking and got interested in it primarily due to a "Ribs" book that my wife got me for Christmas. After reading through the recipes and screwing around with a smoker box on my gas grill, it became pretty obvious that if I wanted to make really good ribs -- and enjoy the process of tending the fire -- I needed to get a smoker. I just got a Brinkmann 40" Smoke N' Pit and cured it this weekend. I discovered -- as another user pointed out in this forum -- that the included charcoal grate is crap and was warped beyond belief after the first use.

The gas grill is nice and convenient for quick meals but I do enjoy the process of lighing and tending a fire. And I like to eat flavorful meats so I figure that smoking meat will make a nice hobby.

Welcome to smf it is a great site ribs in the smoker above and beyond on the grill ribs. You need to try a fatty pretty soon, these things are awesome.

Welcome to SMF, Dave -it's nice to have you here. Before you get to far with that new Smoker, check out the charcoal users section and look over the modifications that will make the smoker more user friendly and produce some awesome eats. Be sure to sign up for TulsaJeffs 5-day eCourse on smoking foods, there is a lot of good info to be had there. Oh the best part is that this course is FREE!!

Welcome. There are now a couple of us nor-cal'ers on here. Great site for infor. They do need pictures on this site or it didn't happen. biggrin.gif I have seen some people from sacto area but I am a bit farther north, redding.

I watch BBQ with Bobby Flay all the time. He says Tri-Tip is very much a California thing. No? I wonder if you smoke it? If so, I look forward to reading all about it. (and seeing the Q-View)

Welcome to SMF, you will be smoking ribs very shortly that will make you wonder why order them when you eat out; seriously. Then I am guessing you will see other tasty treats others on SMF will be posting that you will want to try, the possibilitys are endless.

Thanks for the welcomes. I am about 50 miles south of you, pnee123, in Corning. Yes, Smoke Chef, I believe tri-tip is a Calfornia thing. I have done a few on the grill and will be trying one out on the smoker -- as soon as I correct some of the Smoke N Pit. It is a shame that they can't put a decent charcoal grate in the firebox. Oh well, I have a couple of friends who are great fabricators and there is a welding shop in town.

On to the mods . . .

Welcome aboard! Your wife will be sorry she got you that book! This quickly becomes and addiction, almost to the point of having a mistress! Can't think of any other hobby that brings as much enjoyment though!
