Well a lot of you wouldnt call it chili since it has beans but to me its chili and turned out darn good I made some deer trail bologna last week that wasnt good. I had planned on mixing a few pounds of pork shoulder in with the 5 pounds of deer meat I had but ended up using all the pork for sausage but already had the deer meat thawed so I had to us it. So I made it and of course it was too dry to eat by itself and there is no way I would throw any meat away I thought I'd try making chili with it. Well I dont really have a chili recipe, I just use equal parts meat, beans, tomatoes and then add chili powder, garlic powder, salt, onion salt, celery salt, think I dumped some A1 sauce in there too. I let it cook all day sunday then brought in the crock pot to work on monday and let it cook till lunch time and it was the best chili, or non-chili for you Texans , that I have ever made. Had a great smoky flavor to it and I added a touch of smoked tobasco at the end that really put it over the top. So if you ever mess something up and it doesnt come out of the smoker like you wanted it to, just make a big pot of chili.
