I had a couple of small (skinny)Tenderloins in the freezer so after reading Cowgirls thread, I decided to try. I did a brine on one and a dry cure for the other.
I used tender quick, brown sugar, garlic, peppercorns and bay leaf for the brine.

Used tenderquick, brown sugar and msg for the dry rub.

Since it was small I cured for 4 days then dried and coated with cracked pepper, smoked with pecan at 210 for about 3.5 hours till it reached 161.

Just wanted to thank Cowgirl for her recipe, this turned out great, I really can't tell a big difference between the brine and dry cure.

Nice cure on em there, bud. I just did some cured loin... but as I'm not a big C. bacon fan..it's lunchmeat. Finished in oven to 145° and sliced with my new 12" Weston... performing durn well I might add :{)

Rich, I can eat it all by itself but do prefer to add to Pizza or Eggs Benedict.

OMG.... I'm having breakfast withdrawal! Ever add a bit of dill pickle juice to your Hollandaise? Then again..I'm a pickle freak...

looking good jd..........got a 3 lb loin, and a 2 lbs center cut loin in dry cure right now.........will be taking em out tuesday......soak......then dry overnite in the fridge for wenesday smoke..........i LOVE c. bacon........

and like you.......i have to thank curly gurl for the recipe......errr........guess thats COW patty........errr..........cowGIRL........THATS it........hehheh
