Ok, wen u guys say jimmy dean sausage are you referring to this stuff: example.

well im not sure if they sell anything like that here in oz.
do you think it is possible to mix your own ground meat without any stuffer or meat grinder to use for making a fatty.

for example i was thinking of using ground beef/pork and mincing together with hands, then put in zip lock bag and use that technique i've read on here to get an even panel of meat to line with filling then wrap in bacon.


argh its so annoying wen u guys mention these products and brands that i first do not kno what they are - then after i find out what they are, i realise nup we dont have that.... mad.gif

I make all my own fatty mix. Get a pork Butt-Boston Butt- Shoulder. You CAN mix in beef..but keep it simple first.

Grind the pork...add:
KOSHER salt or sea..
crushed red pepper
BAsic there...

Some add nutmeg, cardimom, thyme...

Fry up a patty- check the taste. When ya got it... roll it stuffed!

I also just use my own venison/pork sausage mixes. Works well for me.

Check and see if you local butcher has his own sausage mix that makes and sells.....Then use that.... JD is just breakfast sausage and brand works.........Some better then others.....

Cris any kinda sausage gonna make a fatty-your local market look for there breakfast chub-or like Rich says grind your own-tis real easy and u know whats in it-and ya spread flat add whatever and roll-than smoke to 165-tis right up there with shrimp on the BBQ.

Sausage is nothing more than ground meat with spices added. Store bought breakfast sausage for fatties is really convienent, just cut off the plastic wrap and you have a basic fatty ready to go. You can plop it in the grill/smoker as-is, or dress it up and stuff it if desired.

After making my own sausage, I simply don't care for store-bought, processed sausage anymore, so I make my own fatty sausage.

cheers all, these post will be great to learn from - i just need to get my smoker up n running first (on another thread i mentioned i need to convert a usa style gas fitting to an australian style one)

chris if the mod's you need arent available just make it a coal smoker ?
or possibly a stick burner if the box is large enough . this place here speaking as a new comer is like the dictionary of smoke house . if ya cant get what you need to make your box work post a need to thread !!!!!
i would bet half as many members have done as much with way less as far as easy set-up's ! this forum as far as i have learned could pretty much get you smokin meat from a speed racer lunch box and a roll of tin-foil.....
dont get dis-couraged !!!!!!!!!!! a fatty hence is a mix of meats of choice with some fat in it..sausage per say can be just about anything meat sourced with a fat content.. you will get it......and sometimes yes rocket science would be easier .smile.gif
