Slice the Jalapenos in half (long way) and get the guts out of it. Use 4 oz of cream cheese, and 3 oz of any cheese u want, and mix together. I usually get enough to stuff about 8 with that amount. Fill the Jalapenos with the cheese and put em back together. Wrap them with bacon and stick a toothpick through the end to hold the pepper and bacon secure. I cook mine in the smoker for about 225 for about hour an a half or until nice and brown. Damn good! I like dippin them in some ranch dressing!
