To Foil or not to Foil that is the question

Foiling ribs part way through the cook time will steam or I believe braise the meat to a falling apart tender. Youll love it!
 
I don't foil 'em till after a couple hours. Foiled ribs don't smoke. The 3-2-1 method allows first the ribs to smoke, then in the foil tenderize, then back out to "firm up" the meat so it's not falling apart. It takes a bit of experience to know when to foil, but the three hour mark is a good gauge to go by. Eventually you'll be able to just look and "feel" the proper time :{)
