In Gardener Montana, just north and outside of Yellowstone Park, is (was) a a place that served Buffalo. They were raised for the meat and for the tourists.
They served Buffalo steaks, burgers, and RIBS!!!! The bet was that you couldn't eat a 'FULL RACK of RIBS" They were full length, (UNCUT), with all the meat intact. Now they were IMPRESSIVE!!
The meat was GREAT, but the RACK was a little scary!
