Sure seems like everyones makin bacon. Is there anyone who's not?


I have canadian bacon comming out today with some cured Butterfly Pork chops for breakfast hams. (good stuff)

I have a ham and some buckboard curing now.

I wonder what I'll do next?

belly for sure.

As for the canadian bacon;
I thought maybe I should cold smoke one loin so I can pan fry it(like bacon) and hot smoke the other.The loins are soaking now so I have time to think about it.
Any comments
 
Like I said..wife exploded over the 16 Lb ham I HAD to put in the fridge last eve. sheesh it's 61 here AGAIN today.

Ah well. She'll love it Easter afternoon.
 
we always have "free fridges" posted on craigslist. Maybe you should look into getting a curing fridge.
 
yep... but I also have "The Meatlocker from Hell" and it's been noticed on the electric bills..the side by side 6' commercial glass door freezer @220VAC.
 
They usually arn't ones I'd put in the kitchen. right now there's a huge subzero it's about 4'w and 8' tall. that thing is huge! I looked it yesterday.
 
not for the kitchen..........to make a verticle smoker out of, like mossy did......i could care less if its in werking order
