Thank goodness for the newbie section. Saw a picture of some ribs on the grill and next to it was a block of wood that looked like it was holding a thermometer prob. my question is would'nt the prob pick up the temp of the block and not the temp of the smoker?

I have used a potatoe... but do have a block of wood i use with mine.... the hole goes all the way thru... the probe sticks out about 1 -1.5 inches on the read end... gets temp about an inch above the grates...

You mean like this...........

Ya, that's my design, working on a patent but nobody want's to patent a block of wood!!

The reading is taken from the tip of the probe, so as long as that's free, your fine!!

if you look at the probe.........you will see a serperation........its just the tip that reads the temps
