Time for 2 Briskets?

Long time lurker, first time poster..... I need to cook two 8 lbs each packer briskets. I have a GOSM that is 20x14x34 so plenty of room. My question is how much will the second brisket impact total cooking time? I am figuring in about a 12-14 hour smoke, will that be enough time for both to get done??

Thanks for any advice or experiences you can share.

Kid, I think you'll actually find that your second brisket will have little affect on your overall time and/or temps. Use your digital thermometer on each of them and you'll be fine. I think your estimated time frame is fairly close.

My train of thought has always been,If there is open grates or space in the smoker, get more stuff in there. Other than cost and rub time, I doubt the difference of time for 1 brisket is much different for 4, and if you are using lump charcoal like me, and babysitting a fire, might as well make it worth the time. If you are just starting out and are aprehensive about your abilities, then maybe less is better. Good luck with your smoke, welcome to the site! I would say that the power or BTU output of your smoker is the determining factor in the additional time that it will take. (Reads as I don't know)PDT_Armataz_01_04.gif

Yes the more that you smoke, the longer it will take, but marginal difference. Maybe 15 minutes maybe one hour. There are too many true variables to give a true guess. Being prepared for the long haul is the best plan (plenty of fuel and smoking wood, extra beverages and so on)

Expect the long run, but don't count on it. Smoking is like that!
