Hi everyone, I've been a lurker for the last week or so when I discovered this great site and ya'all have motivated me to have another try at pork butt. I am a newb when it comes to smoking butts having only done it a couple of times with pretty good results. (it has gotten better each time) Here's my question/situation: I just went to the butcher and picked up a 7.5lb bone in shoulder, it is Tuesday now and I won't put in in the smoker until Friday night. I always use a rub about 24 hours prior to smoking but since I've got a couple days until I smoke it should I rub it now and let it marinade or should I hold off and rub it later? Is there any benefit to doing it now or would this compromise the meat? Any help would be appreciated.

Hi there,

First off, Welcome to SMF. Head over to roll call and tell us a bit about yourself. Sort of a tradition around here!

I have rubbed ribs and butts both ways 1)a couple days before and 2) right before the smoke, and I've seen no noticeable difference. Others here may disagree, but that's my 2 cents.

Hey Northwesterner, welcome to the SMF! The butt is a forgiving piece of meat. Either way I feel it will come out to your liking. Good luck in all future smokes. Enjoy.

welcome to the site. Butts are very forgiving, and I don't see any advantage to rubbing it more than overnight, in other words, I doubt that you will get anymore benifit from 2 or 3 days in the rub. It only gets into the meat so much. Now a marinade or an injection is a little different.

Good luck with the smoke, and I am sure you will enjoy this site!

Welcome aboard!! When I first got into this I was eager to know everything step by step, info which is found here and by trial and error...First, below is a link to an old thread that has absolute step by step instructions for you, it's a great guide and one that I have saved for reference. Two, The longer that it's rubbed, the more depth the flavor will take! Slather it with mustard, wack it with your rub, then cover in plastic wrap and into the fridge until Friday!!! Below is the link...

Welcome to the site. There is a nice sticky on how-to for a pork shoulder. I think that saved me tons of trial and error time. I also got Jeff's rub recipe from the site. It is great. There are others available as well.

As RIP said, Q view posted on a regular basis is always encouraged to soothe the mind of the SMF.
