Howdy folks.

Well, last weekend I did my first fatties, and you were all right on the money. Ridiculously delicious! They will definitely be included in all my future smokes! I didn't have a chance to take any pics of the ones I made last weekend, but this past Sunday I made some for the family and some for an office holiday breakfast we had yesterday. When I wrote down "Fatties" on the sign-up list, I almost got fired!

But when I brought them in, I almost got a promotion!

Here's a rundown of what I made...

2 w/JD Breakfast Sausage stuffed with Mild Cheddar and wrapped in bacon
2 w/JD Breakfast Sausage stuffed with Double Cheddar
2 w/ JD Bold Sausage stuffed with Jack Cheddar

Way to go on them there fatties. They look great. Just tokk one off that was 2lbs mixed 1/2 & 1/2 reg and hot stuffed w/cheese but no bacon. Sure does taste good.
 
I smoked them at 250 for about 3 hours(ish)... I waited til internal temp hit 160, then let them rest for 30 minutes or so. I blasted the ones with bacon in the oven at 400 for 10 or 20 minutes to crisp up the bacon a little. And tasty they are! Definitely a great football snack (or hockey, as it were!)

fatties rule,when i make sausage I will always save a few #s for another experiment
