I played professional football for 9 years.  Now retired, wife, 2 kids, and moved to the southwest....I'm new to this and looking for new recipes, idea's, and how to improve.  Would like to possibly start competing locally and see how it goes but I'm a ways off that.
 
I am a jewelry designer so I have been busy working for the season.  Smoking is going to have to wait until after xmas.  Everything is going to have to wait until afer xmas.

However, New Years, I am smoking a BIG pork roast!  I'll get back to ya all on that.

I am the facility director for a multi-use retreat facility in the Texas panhandle. We routinely cook for groups of guests from 20 to 500 people. We are currently adding on adding on an outdoor kitchen that includes a Traeger COM 200 pellet smoker, 6 burner range, convection ovens a ddeep fryer and a charcoal grill.
