Today was sausage making day

After cutting up pork butts and deer meat yesterday, today was sausage making day.

125 lbs cubed, seasoned and ready to grind. Next it is all stuffed and then it is hung in the smokehouse for about 8 hours then packaged in the morning.

PS: My helper did not show and I was stuck with this task alone today.

Yes, I think my git up has got up and left me. This is the first time I have had to do that by myself.
 
Hey goat you don't happen to have any more pictures of your smoke house you would share do you? I am making a smoke house and I have everything pretty much done I am just trying to get idea's on what to do about a rack system and what I want to do for a heater. Mine looks to be about the same size as yours maybe a little smaller. Any info would be much appreciated.

Goat those pic's were awsume. Sir if you ever plan on doing that again and you need help please let me know. It'll be worth the price of the plane ride just to learn!!! I think I just found my hero.
