I just acquired a farm that has a 10'x10' foot smoke house on it. How do I build a fire and what kind of fire do I build to start smokig meats in this smokehouse? I would like some tips on smoking since I am a rookie at this smoking. How do I hang my meats and should I cover my meats with cloth to keep the insects off of the meat?
