Hey folks! I am new to the site and just recently finished the 5-day ecourse. Wow! It helped so much. Actually, I became a smoker by accident. A few years ago I bought my stepfather a Brinkmann Smoke 'n Grill electric smoker just for shiggles. Unfortunately, he is more of a staunch grill man and never used the device. So, a couple of years later I asked to borrow it and it has been with me ever since. First, I smoked a turkey for Tday and then several chickens hear and there using mostly Mesq and Hickory. I had never read any guidelines on the proper techniques so let me tell ya....I had a lot to learn.

My first complaint about the Brink is that it does not have a temp control, so that sucks. Secondly, I never knew how strong the wood can taste. Before coming to this site, I was smoking a 5-6 lb chicken or a 12 pound turkey using about 6-8 fist size chunks of wood and had so much smoke billowing out it looked like a damn steam ship! Long story short, I had everything in a 500 ft radius smelling like smoke, driving the neighborhood dogs crazy and my wife hated the taste. So, I had a slight learning curve...

Anyway, I have finally learned to use less wood and even bought some apple wood from a nearby orchard. Seems they prune and remove old trees every year. I hear it is good for chicken.

Welcome to SMF ... you're lucky you didn't turn yourself and family off with the over smoked stuff ... glad it's all working out for you!

Hi Brent: Good to have you on board. Very nice introduction. Makes us feel like we already know you. Always wondered why some members are so secrative and won't even give their names until prodded to do so.

I think you have gotten past the sometimes most difficult part, that is getting the family to support you. Sounds like you are all set in that department.

Post some pictures of yur next smoke. We always like to see Q-Views.

Welcome to the SMF! That apple wood is a nice compliment to pork also, my favorite for pork in fact.
 
Thanks all for making me feel welcome. I will probably smoke a Pork butt this weekend or next week and post some views. If I do smoke a butt, should I sear it first over a real fire or just plop that fugger in the smoker?

Heh... Welcome to SMF, and most of us have been thru rather..umm ... inauspicious early smoking sessons. But now you found the cure!

brent, welcome. lots of great info here. I use the same smoker and somewhere on the SMF there is info for adding a temp control.
