Hi everyone

Im Mike and live in south florida. Im in the 'just learning' category and have tons of questions.

My first smoking session was completed yesterday with a Masterbuilt 7 in 1 (propane smoker). I smoked a bird and some back ribs. They came out good, but definitely could have been better. I had a problem keeping the temperature from rising up to 300.

Even after my first session, I have a feeling I would have been happier with a cabinet type, but ill keep the 7 in 1 for a while to ensure I like what im doing.

Nice to have you on board. You have a good piece of equipment there, so it is probably just a case of getting a little more experience with it. They all take a little gettin' used to.

Meowey already suggested the eCourse. You will enjoy and learn a lot from that. Also, scroll down through the site and you will see threads for each major type of meat as well as threads for different types of smokers, etc.

Now that you have introduced yourself, post any of your questions to their appropriate threads and I know you will have help almost immediately.

Hia Mike! Welcome to SMF! If by saying "having a problem keeping the temperature from rising up to 300" you meant you can't keep it lower, you were lucky with the bird, not so with the ribs.

Poultry is best done around there...especially if ya love the crispy skin as I do.

check out your air intake adjustments. You can get alot of temp variance just by limiting the amount of air that goes in. But be careful of the dreaded 'white smoke" too. gotta play with it, but the Thin Blue will appear!

Welcome Mike -

I have the Brinkmann All-In-One which is similar. Does your have the little fine tuner valve on the propane hose? I use mine with charcoal 99.9% of the time I like the taste better. I do use the propnae to start the charcoal though.

Hi Mike, glad to know you have joined the best smokin' site on Earth, SMF that is. Playing around with your smoker and meats is how some of us learn how to deal with the corners and curves on the road to smokesville. Make it a happy adventure my friend!
