Italian and Pep last Night!

I smoked some Italian and Pep sausage last night, and used some cherry from Richtee. Good smoke but I had a few problems too. I had ordered some lamb casings thought the mail and some pig gut as well, the lamb casing was so small in diameter I couldn't even find the opening and even my smallest horn was too big for it to fit over! After spending a good thirty minutes just trying to get the knots out of those things I trashed em and used the hog casings. I'd bought an 8lb stuffer from Northern tool because I still don't have the Enterprise cleaned up yet and the price was right. But the sausage squirted around the piston more then it went thought the horn, I must have re-packed that thing a zillion times and I has about four plastic zip locks between the piston and the meat trying to get a decent seal. If anybody has a good idea about how to fix that problem I'd be interested to know how to do it.

The last problem was that I got the links mixed up coming out of the smoker and into the ice water. The all look the same now that their smoked! I'll have to taste test tonight to try and separate the two.
Brining the bird for T day tonight as well, should be fun. Going with a cure for that and pecan for the smoke.

Sausages are easy to mix up. I try to do different sizes or types so I cn see or smel the difference right away. To bad you lost the whole batch of lamb casings. I never used them how are they?

Are you sure it's an 8 lb stuffer? Maybe it's a 5 lb stuffer?

Oh darned! Dude just reminded me that I forgot to answer your question. So many PMs tonight I am gettting myself confused! LOL

My stuffer uses a big red rubber O-ring. Measure the piston size and you cn order one from Lem Products. Sounds like either you don't have one or it's to small. Mine never leaks out anything from the piston.

I had the exact same stuffer from the exact same place. After messing with it some, my ultimate fix was to throw the damn thing away. PDT_Armataz_01_19.gif
Good luck, I hope you get it working well........I never did get it near anything I was satisfied with.

Damn, that's disheartening! This is not a vertical stuffer, its one of those half U shaped affairs with a Handel that hurts your hand. I guess I should have saved my money and bought something better. If the box is still at the house I may return the thing and try and get my cash back.

Yeah, sorry to bring the gloom and doom your way. Yeah, the half U thing with the sorry handle.

I would take it back. I tried making rings, buying rings, never got it to anything I could find tolerable. I would try to return it. The thing that really pissed me off about it was that I probably spent more on trying to make it work well than I did to buy it.........oh well, lesson learned. If that is the worse thing that happens in life I can't really complain.

Return that thing and get a nice vertical! It doesn't get any easier without a motor! I really love my Grizzly.

Hay the taste was good, but not worth the effort. I'm going to work on my Enterprise and see how that goes.

Jim the 5# from Grizzly is great,such a nice stuffer,and ya easy to mix up your sausage.I batch it out and mark as needed.
