Smoked turkey for me is hard to find a smoke ring, the meat is to pink from the brine. Looks and has a taste like ham..... MMMmmmm

I have a ditch burner I can hook up to add more brown to the skin if you like !!! I think it is a differance in the type of smokers we use and how they are fueled. We need to remember (for us ugly people) it is what is on the inside that counts !!!
I do not rub my birds (yet). Just brine and then maybe inject. I do have to say both injected birds tasted great, but the injecting covered the smoke taste.
