Hi all!

It's time to post another smoke! Today it's beef back ribs. I found 4 racks in the freezer from August. Mrs. Meowey wants her freezer space back. (I don't know why because I do most of the cooking and smoking here - LOL!)

This will be an interesting smoke as the ambient air temp is 27F right now after an overnight low of 8F, and a forecast high of about 40F. Luckily the wind is not blowing. I'm planing to smoke these puppies for about 4-5 hours with apple wood. I've removed the membrane (what a pain on these beefies), rubbed and they are waiting in the fridge. I will spray them with the Apple juice / Captain Morgan's Spiced rum mix. I can finish them in the oven after they take on smoke if the temps are too hard to maintain. I figure the ol' CharGriller will use a bit of charcoal today. (Too bad I don't have Geek with Fire's automated temp control toy - that would be handy today!) The ribs will hit the smoker about noon. BTW, I already have a couple of soup bones on the stove, simmering to make a beef stock to which I'll add the smoked beef rib bones for a little extra smokey goodness.

Wow looks great. Definately keep us posted... Just woke up from a late night smoke, sorry if there is any misspellings.... VERY TIRED...

The first time I read the directions was after I took that shot. I notice that they advise caution against turning the food! - LOL too!

LOL you too Crown? Me and some friends got the smoke bug at 6:30 last night. Off to the store, back to my place for rub/prep/grab the ECB^2. Back over there...BONUS, the guy has an open front woodstove on his deck and it was ROARING last night.. endless hot coals supply! Was the thinnest blue I have ever seen too... Well, 1AM all told...we was drunk still...but no longer hungry! BB's and countrys :{)
 
Indeed! There is a slight smattering of snow scattered about the yard. I'll try to get a shot of it before the sun gets on it and melts it.

Now those are some beef rack ribs. Wish I could get them like that down here. I have to stick to the beef boned ribs to get some with some real meat on them.

I don't know how to shop, trim, cook or anything about beef ribs. So I guess I need a lot of details. I think I could figure out how to eat them, you could leave that part out.
 
Beef ribs are more forgiving jmedic. For one, they do not need to be done as long as pork. 3 to 4 hours will have you finishing up, atleast with my single beef bone ribs that I do. Some pink in the meat will not kill you. Thing of a big steak bone with meat still on it. I marinade in mojo, then smoke them or you can do rub as meowey has. I've gotten right fond of them.

As for shopping, these are Beef back ribs, which are different from "short" ribs. They are the equivalent of the pork baby backs. I usually smoke them like baby backs. I did not have to trim them much. There is a membrane to remove and it's pain in the a**. Just take your time and don't let it frustrate you and it will come off. Today I'm not going to foil them. I figure about 4 to 5 hours because they are in slabs. As Flash said, the short ribs will cook faster because they are separated. As he also said, a little pink is OK with beef.
