"lil' snooty" can chicken

Well, as an extension of last weekend's "designated driver" can chicken, I thought I'd try the same process on some Cornish Hens. The problem is their...uh....back door is a little smaller than a roasting chicken. The good news is I found a way to do it. The bad new is, I had to temporarily discontinue my boycott of StarBucks coffee (I don't like their practice of moving in and shutting down mom and pop shops....shame on you!).

While at the gas station I saw that the StarBucks iced coffee cans were really small, and would work perfect on these small birds. Now, while I thought about using the coffee in the cooking process, I couldn't put a combination together this weekend. So I quickly downed 2 cans of "Double Shot Espresso and Cream" and cut the tops off (cleaned them well). Filled the cans with Dr Pepper, EVOO, some bananna peppers and its juice, thyme, and garlic powder.

I had the birds marinade over night in a mixture of Sea Salt, Maple Syrup, and pear juice/syrup (from canned pears). Mounted the birds on the cans and used some large apple wedges to close the neck opening (to keep the steam in).

Cooked at 275 until the birds reached an internal temp of 175 (spraying every half hour with apple juice, EVOO, and Dr Pepper), using a combination of lump charcoal and oak.

Here's the result (the guy on the left looks like he's got gas!):

Looks good Geek. Looks like the guy on the left might also have a hemorrhoid problem too. eek.gif Did the coffee let you sit down while smoking?

You know Debi, I thought about that (cause I've always got some around), but those cans are made out of tin. I wondered if it would leave a metallic taste. What do you think?

Might be right there. I think they are made of tin. It might leave a taste but then I swear I can taste the aluminum too. I got one of those chicken holder thingiest and fill the space for the can with sliced oranges, lemons or limes.

mmmmmm tasty looking. I love those. Perfect size for a meal.

I've used the small pineapple juice cans and also the small V-8 cans before. Both worked very well.

Seems I read somewhere about usin frozen juice cans. I guess at 300 or less you wont burn the cardboard.

Josh, I've always used the small pineapple or apple juice cans for cornish hens and have had good results.

do the tomatos have a tinny taste ? i'm the same- i can taste aluminum if i scratch it w/ a fork. what about rotel tomato cans- they would fit for cornish or maybe even violate a quail or guinea.

I thought they were pretty good. My wife, who doesn't share my passion mind you, said it was one of the best things I've ever smoked. She was eatin' it about as fast as I could carve him up!

Yeah I get it. Check out my post in the OTBS forum about smoking nerds. We could start a club for wifes who are less than excited about smoke rings,and chickens ect...icon_biggrin.gif

Yea, that's actually what I was going to use, but the one's I found were too tall. The starbucks cans are the perfect height to allow the legs to still make contact with the grill grates, and hold the bird upright.

yeah.......was going to mention you would have to cut em down.......but no big deal with some "Kitchen Aid Shears"........hehe

or just a good sharp drop point skinning knife........
i always cut the top off anyway.........to allow ALL the steam to rise up.......

And I love to go into star$$$ and order a medium. "Grande?" No, a medium. Leaded. "What's that?!?" With caffiene. "Oh! Any carmalottawhatatta goop?" No. Straight coffee "Really?" Ayup. Really. Sheesh.
