Im about to brine some bone in breasts for the smoker. Will also be putting on some wings for buffalo wings. Never done this before but it sounds great to me.

My question is will I need to brine the wings too? Not sure why I would need to cause I never brine thighs and they turn out awsome. Any thoughts on this one?
 
Sounds great SF. I wouldn't think you need to brine the wings. Just smoke em, sauce em, and eat like crazy. I actually prefer my hot wings to have a bit of a crispiness to them. I usually fry them... but should be tastey smoked too.
 
I agree with the crispy thing. The source I got this from said if ya want em crispy to toss em on a hot grill shortly after smokin. Dont know if I will try that the first time for fear of over cookin. Ill let ya all know how it turns out. I mean how bad could it be? Smoked chicken & hot sauce! Mmmm!
 
I have smoke wings and I toss them over the fire to crisp them bore serving.. Works well.. There are some posts on this... By now I'm sure you already ate them :)
 
S.F. I've smoked turkey wings for about an hour and then tossed them into the fryer to crisp things up. For chicken wings I'd probably go 30 minutes in the smoker then toss them in to the fryer to crisp them up.
