I needed a fix... had to smoke something, so yesterday I fired up the ol' CG and did up two racks of ribs and a rather unique fatty...

The fatty was an experiment. I mixed a 2 lb chub of JD with a raw egg, coarse black pepper and homemade bread crumbs. I rolled that out flat and installed the good stuff:

My wife had made stuffed chicken breasts one night and we had a couple left over. I took one and chopped it up, stuffing and all, added some sharp cheddar cheese and rolled it up, covered it in Jeff's rub and let it sit until the smoker was up to 250, then smoked it to an internal of 160.

Wow was it good!

The ribs were the usual 3-2-1 style, with a little less 2 and 1. They came out really good! The only pic I have of them is at the 2 hour spritz... sorry, no finished product.
