Hi Folks,
I've been way past due to finally say hello to all you talented outdoor chefs. I've done quite a bit of reading thru these threads and I must say I'm impressed.
I've been smoking meats for about 12 years now, mostly small stuff like jerky, poultry etc., but now it's time to step up to the plate and get a new smoker. Seems like our new puppy enjoyed the electrical cord on my "Little Chief" so much the it disappeared one day. Yes, he did it while I was in the middle of 10 lbs. of jerky. I ran out and was lucky to find a new hotplate suitable to get me through. Yes, he liked that one as well, but thankfully he did not get hurt and I had enough smoke in my last batch to finish the batch in the dryer. Maybe this was all meant to be since the new hotplate barely had enough oomph to get a decent smoke going. My smoker now resides in scrap iron heaven, and it's time for a replacement.
