.please explain encapsulated citric acid that you call for in your smoking recipies. how much do you use ? where do you get it?when i have smoked my polishes in the past i have gotten the base mix from our local butcher then added myown spices after that .im guessing he's put it in already but i want to use some of yourrecipies and do more from scratch thanks.
