Giving it another go, Brisket and pork butts

well i figured it was time to give another go at smoking ... been buying up meats around town when they are on sale (pork butts for .99 lb, and brisket for 1.99 lb is about cheapest i have found) i had to cut the stuff up a little to fit on my small smoker .. but that just means it won't take quite as long to cook ...

i am using some of Jeffs rub on em ... first time trying it ... knowing me i will tweak it a little bit after this time ...

and it's loaded on and ready to go! ... of course while taking the photo my fire flared up .. got it back under control after i put the camera down =P
 
i have noticed, that making a 'screen' of sorts to deflect some of the heat off the meat near the side box has made a huge difference so far ... all of the meats seem to be cooking about evenly ...

after i cut them, each one ended up about 2.5 lbs .. so prob in another 2 to 3 hours they will be good go to ... watching the temp in them though for when its time to wrap em up in foil...

3 hours .. temp on the pork is reaching 165 ... so not a whole lot longer and it will be ready to put in foil ... beef is still in the 150's

the last pork is just about ready to wrap up ... the beef is still sitting around 159 for temp ... so it is goin up... but slowly ...
 
i will say all the information i have gathered from here .. has changed how i smoke and grill .. thats for sure ... =) now, if i could just get my smoke where it doesn't get out of control on me ... but i think some of that is my setup i am using .. got to figure a way to adjust the side inlet a bit more...
 
just wrapped up the last pork ... the beef has finally started going over 160 ...

of course my wife, our kid, his friend, and some in-laws are now showing up from time to time eyeballin it ... gotta figure a way to distract em! ...

didn't tell them i was cooking ... but of course ... the smell kinda travels...
 
last peice wrapped up now and on the grill ...

just loaded a pan of baked beans in there to ...

the pork is almost ready to put in the cooler .. (at about 190 right now) ...

battery in camera is charging .. so will get another pic soon.
