Smoked a sirloin tip roast for the first time, it was around 6lbs. I rubbed it and let it sit in the fridge over night. In the morning I seared it in a pan and put in on the smoker and cooked aroun 225o. When the meat reached 120 I put it in a aluminum pan and cooked to 150, wrapped it in foil and a towel and put in a cooler for an hour. It turned out tender and juicy, I was worried about drying it out but it turned out good.

My oldest wanted to help out

Before the foil, at 150

After the cooler

That little man is really paying close attention to his rubbing technique. Makes you wonder how serious popop looks when he's applying the rub. Scarery how much they notice when they want to.

The meat looks great Gramason looks like you got a great little helper there too!
