Beef Shoulder w/SmokyOkie tendencies...

Well, I just had to do some beef today... and I saw that low&slow was doin' a beef roast... that sounded really good. Sooo, I decided to do a beef shoulder roast, with a hint of SmokyOkie.

I started out with a 5.67 lb roast, rubbed with a Jeff/Pop-Pop Phil rub. I seared it on my small Weber (the li'l guy was so happy I finally paid attention to it), and transferred it to the CG. We have a load of lump and some hickory chunks to do the job.

I am hesitant, yet proud to say that my new cell phone camera works okay ...read: alot better... than my antiquated digital. Here's some shots of the begining...

Anywho, I smoked it 2 hours fat down, one hour fat up, then foiled it for the duration. The roast hit a plateau at around 160 and stayed there for a little over 2 hours. Finally got the internal temp up to 195, then pulled it from the grates. I let it sit wrapped for an hour, then sliced it. OHHH YEAH! Nice and juicy and tender... definitely a success!

This will be 2nite's supper... pix forthcoming later this afternoon...
 
Nice work, there Hawg... Yanno, insofar as phone cams... seems mine works quite well for some shots, and not others. There's a menu to go thru to set it up for certain distances, lighting etc. Perhaps I need to get un-lazy and actually go thru it. Yours are pretty good pix.

As promised, here are the finished project pix... this roast was so tender and juicy, I can't even begin to tell you... and amazingly close to that SmokyOkie style brisket flavor.

As my 2 year old grand daughter would say, "Pop-Pop, this is ah-lishus!" God I love kids!
 
I do believe after trying the brisket and now seeing that HawgHeaven had great success with a roast; I doubt another roast will ever be done in the crockpot or oven in our house again. I may just slice it raw for jerky though !!!
