Ham and country ham

I know country ham is alot more salty then regular ham and a bit more tough. What is the difference, and what is the difference in making it?

After curing, country hams are aged. Most hams you get in the store aren't aged.

Most ham you by in the store don't even taste like ham is supposed to taste like. They're all water.

Lisa - get your hands on a fresh ham or even a shoulder - brine it and do a slow cold smoke you won't believe the difference.
