Hello All...

I've been excitedly reading the posts on this forum for a couple weeks now, and I've *finally* decided to speak up and introduce myself.

My name is Matt and I live in Manchester, NH. I don't have my smoker yet, but I hope to purchase one sometime next week. I have decided to go with an electric smoker to start with because I am so new to all of this. I figure if I can get my recipes to a point where I'm happy first, then I can "master" the art of a "real" smoker later on. I travel (and work) a lot too, so the convenience of an electric smoker really appeals to me at this point. I am the epitome of a "newbie"... I'm as green as they get!

I consider myself a barbecue connoisseur, simply because I eat so much of it (I had to move into a bigger apartment so my belly could finally have his own room). I've never attempted to cook ribs or brisket or pulled pork because I've never owned a smoker and I believe cooking these items in the stove or on the grill takes away from their natural flavor and goodness!

I look forward to sharing ideas and methods with all of you - I can tell from what I've read so far that all of you will be a wealth of knowledge that I can't wait to tap into! I have already received Jeff's 5-day course, and I plan to purchase his rub and sauce recipes as soon as I have the chance.

Anyhoo... just wanted to say hello to all of you and I look forward to picking your brains real soon!

Welcome to SMF Matt, I myself started out with an electric ECB. My advice would be to do a pork butt first.....Excellent pulled pork. Butts are very forgiving, cheap, and a good piece of meat to learn on. I also would reccomend buying a digital probe thermometer so you can accurately maintain your temperatures.............VERY IMPORTANT. Also don't trust the thermos that come with smokers, they are mostly not trustworthy. If you do buy Jeff's rub and sauce recipes you will not be dissapointed. Right now I'm leaning towards the MasterBuilt 30" Stainless Steel Electric Smokehouse. I saw one at Sam's club a couple weeks ago and it seems like a nice model. I've read quite a few reviews on it and haven't really heard any discouraging words about it, so I think that's the one I'll go with. Has anyone heard anything about this model/brand? I'd definitely be up to hearing any reviews, good or bad!

I'm formerly from Milford, NH; about 15 miles away. Used to work in Manchester. Now transplanted to the Florida panhandle. Didn't see any snow last winter for the first time in my life. I miss not having a basement, though. Everybody in NH has one and no one in Florida has one. Had to build a seperate building for my homebrew and workshop; used to have a 1/4 of my basement set up as a brewery.

Now I play with all sorts of fun new Navy toys, brew, hit the beach, and QQQ!!!
