My first smoke - ran out of water and wood :(

So I woke up this morning at 3:30am and kicked off my pork shoulder in the smoker. I had the wood pan and water pan filled. I waited until around 4:30am to make sure the temperature had stabilized at 225F and there was nice smoke coming out. I then went back to bed and set the alarm for 7:30am. When I went to check on the smoker - no smoke :( The water pan was dried up and the wood was ashes. The pork temp was at 120F. I quickly filled back up the water pan and put wood back in.
Have I ruined my pork? Is there something I need to do to help offset the period of time with no water? Or is this just a bump in the road and things will still turn out fine?

what temp was your smoker at ?? what type smoker is it ?? seems a 3hr nap is too long for your set-up....typically most smokers need attention far sooner ,be it adding charcoal ,water ....opening the air intake etc etc ....getting your smoker back to temp a.s.a.p. and carry on till desired internal temp is reached ,you should be fine ..keep us up-dated

I checked your profile and it says you are using a GOSM. I have never had my GOSM run out of water. I need to add some after about 6-7 hours. Did you fill the water pan to within an inch of the top of the pan? (I think that is recommended by the instructions) I would check the accuracy of the built in thermo. As for the wood, I find I need to add some about every hour to hour and a half.

I checked the temperature using a digital thermometer..

I just checked the box temperature using my digital therm. The digital thermometer reads 195F and the smoker temperature gauge reads around 210F. So it looks like I am a little on the low side.
To answer meowey's question, yes I did fill the water tray to 1" from the top. I refilled it again once it dried out and it is down about 1/2" so far after only about an 1 1/2 hours. So I guess I'll just have to keep an eye on my water level more often.

Wind will have an effect on your temp & can "fan" the fire on your wood. I don't know the GOSM but again if it is windy you may have the burner turned higher to keep the temp up in the smoker & that may have the effect of boiling the water off faster alsoconfused.gif
