Well after smoking 3 or 4 times a week for about 6 weeks I hit a dry spell. Was getting stuff ready for vacation. Well got back from vacation last week and smoked a butt over the weekend and was the best one I've done so far. It was a little over 7lbs and used McCormick pork rub and hickory chunks. Took about 12 hours in the smoker then sat in the cooler for about 2 hours till everything else was ready. I'm finding that the chunks give much more consistant smoke and I'm getting a lot better smoke flavor since I've started using them.
