Hi all,
I have a quick question cus the bird is almost done!!

Can I leave the meat thermometer in the bird for a few mins while I smoke or does that throw off the reading? My thermometer is too slow, I need a new one..

Also if you don't recognize me, I'm a noob.. I just posted in the introduction area =).

If it uses a meat probe on a wire cable, you're OK.

like was mentioned, if it's a 'remote' thermometer that has a wire from the probe to a base unit of some kind, absolutely. If it's a dial thermometer, you can as well, but be aware that the smoke will make the glass smoked too and it will be come unreadable. If there is any plastic on the thermo, I'd suggest not even attempting to leave it in as the plastic will melt.

Thanks for the help, I used a regular dial thermometer to so-so effect.
I'm going to have to get myself a probe as soon as possible.

That said, the birds turned out great. It was the first time I cut out the backbone and it made a big difference.

I also use dial thermometers with glass looking faces but they can deform if left in the smoker for the whole smoke. I have one I've been using for about a year that just gave up the ghost and started to blister.

if you're looking for an instant read type, I highly recommend thermapens. A little pricey, but very accurate and VERY fast.
