Well it is certainly a pleasure to be here. Lots of interesting thoughts and ideas here. Heck, I might even contribute a couple.
As the smoker that bro and I are makin comes to completion, it will be interesting to see if it will perform as good as we had hoped. We ( and others) have put alot of time into this thing. It has to be a labor of passion!

Thought I'd share some salsa flavor here. I use tomitillo(sp?) tomatoes in my red and yellow pepper salsa but before They are rendered to size I quartar my peppers and tomitillos and smoke them w/ a wood of choice for around an hour or maybe more if I forget about them. It really makes a deep flave (along with other tricks) in the slurry. They absorb the flave really fast and ......mmmm! I'm sure I'm not the first but it was a nice find!

Post a recipe for a batch size of your choice. I know...every one's different but nail it down. Gotta do that for the sauce one day too...heh.

He DOES make some good salsa tho, I can vouch for that.
