I have just finished preparing my first ever fatty and can not wait to throw it in the smoker!! I mixed a pound on bob evans original and a pound of hot italian sausage, and I stuffed it with green pepper, onion, mushroom, a little jalepeno, and some cheese, then wrapped it all in bacon. PDT_Armataz_01_36.gif I wasent sure on a rub or not so I didnt put anything on it, any sugestions?

Some folks use a rub and some don't. You will be fine without it and you will be hooked on fatties for life. Have fun and good luck.

Ok here's one of my famous dumb questions, how do you stuff it? I'm going to do a Fatty tomorrow and I'm not sure about how to stuff it. Do you just roll it out flat, add what you want in the middle and roll it back into a log shape? Hey I'm trying PDT_Armataz_01_09.gifPDT_Armataz_01_09.gif

Yeah, you put a piece of waxed paper down on your favorite cutting board, then place a roll of sausage on it, then top with another piece of waxed paper.
Roll it out like dough, remove the top layer of waxed paper :), then sprinkle what ever you want on the sausage, roll it back into a log and smoke-cook for about 2 1/2 hours.
Ummm-mmmm good!
