I think everything has pretty much been coverd except smoking some of them. I smoke peppers as well and then go through the dehydration, coffee grinder deal. I know some don't like seeds but I do so I grind all of it except the stem.
Do some smoked and some not and you'll be amazed and plesantly surprised at the difference in taste with the same pepper. For what it's worth, I smoke them with applewood. Smoked japs are great, hence the Chipotle aspect.
