Beef Tongue? - Page 3

Let me get this straight......

The butt is the shoulder??? Wow.......... Who'd a thunk it? I mean really, besides a farmer, who would know that pigs deficate out their shoulders?

Tongue is great - I like to boil it for 3-4 hours with whole lemons - peel and all cut up in the water. Very tender - you have to peel the tongue first. Great with horseradish. I used to be able to buy ground heart cheap and used it as ground beef. It was very lean and good. Got a heart and two tongues in the freezer right now. If I was to smoke a tongue I would cook it first and finish in the smoker - the bacon Idea sounds great.
