Cut into peices the size of your thumb and marinate in milk for a few hours. Milk takes a majority of the gamey taste out and also tenderizes. Then marinate a few more hours in your favorite marinade. Wrap in bacon and slide a toothpick threw to hold the bacon. Or you can put them on a skewer with other veggies and meats. Give them an hour to hour and a half of smoke and finish on the grill. Mmmmm, sooo good !!!
