Hey all, with these pictures of FATTY's and everyone giving there experiences I was wondering what all types of recipes people have for theirs. I was not able to find a link or thread on this portion so your input would be great. I am reroofing my house in a couple weeks and going to put together some Q for everyone. Thought, some brisket or tenderloin for a dinner. Fatty's for breakfast. I will have a group of about 5-7 people working. Bribe them with beverages and food.

How about breakfast sandwiches?

On a toasted or grilled english muffin or bagel place a slice of cheese, then a slice of a fatty, then a hard fried egg, then a couple strips of bacon, then another slice of cheese, then the other half of the bread and offer ketchup, mayo and mustard as condiments.

For a real treat offer choices of pepper jack and other cheese other than the usual "sammich" cheeses wrapped individually.

And of course leftover fattie, if there is any, can go into an ABT or an omelet or on a pizza!

Recipes for fatties are in your head and your imagination is the limit. People rub them, cook them plain, flatten out the sausage and sprinkle with shredded cheese, sauted onion, peppers, garlic, mushrooms, cream cheese, etc. Just think about what flavors you want and start in. This is probably clear as mud, but hope it helps.

Almost forgot to mention that I usually roll a JD Sage fatty in Jeff's Rub. If I am out of that I use my imagination and just season it or "Leave it blank".

I have not yet experimented with stuffing one but that is coming soon, time allowing! But there is almost no way to go wrong with a fatty, whether you go exotic or plain! They're GREAT!
