Folks,

It's been a while since I posted a smoke, so here goes.

Rubbed the butt and ribs with my pork rub last evening. Butt into the GOSM at 6AM. I'm smoking with hickory and the smoker settled between 225 and 240F. (You take what the smoker gives you on a particular day). Ambient temp at start was 56F. Forecast is for low 70's and T-storms later this afternoon.

I will be spraying the butt and ribs with a 3-1 mix of apple juice and Captain Morgan's Original Spiced Rum. I'm going to foil the butt at 165F and take it up to 205F, wrap in towels and let it sit in the insulated cooler for at least an hour or more before I pull it. The ribs will be started later and will be done 3-2-1 style.

Here are the ribs ready to go in. It's 5 1/2 hours in and the butt is up to 154F. I figure it will plateau in the next hour or so.

Meowey, what does the apple juice and Capt, Morgan tase like when the meat is done? I tried some whiskey shrimp about 25 years ago and the whiskey taste was so stong that I couldn't eat it. Terry

I had used apple juice and bourbon in the same 3-1 mix, and a while back swalker suggested using Captain in this thread

I tried it along side the bourbon in a blind taste test with family and friends and most preferred the Captain. It adds a bit of sweetness and the sugar in the rum carmelizes well. It does not overpower the meat.
