These are a little late, but this past weekend brisket turned out awesome. I appreciate all the help you guys gave me and advice. I followed it to a tee and the brisket (8 pounder) was a hit. There was NONE left.

I rubbed it with Stubb's Rub, smoked over hickory for 4 hrs, then finished in foil in the oven for 2 hours taking meat to around 200. Had a great smoke flavor, and was juicy and tender as heck.

Ya know!! Your biggest hope when cooking for company is that everything will turn out perfect, and they will love it. Problem is.......that's what happened. I had my teenage nephew over and between his appetite for everything, and mine for almost any type of smoked meat and the rest of the folk that was here, there was none left for anyone. Kind of disappointed me the next day, I instinctively went to the fridge for leftovers and was sadly reminded of "how good it turned out".

Squeezy...point well taken. Like I said I'm new at this smoking thing and am still learning.

DeeJay, I think I am going to do another brisket soon. If not then I will be doing ribs fo sho. I also wanna try one of those fattys and those stuffed jalapeno's smoked sound good too. Soooooo much to try.......
