Took off two butts after 5 hours and reaching an internal temperature of 150 degrees.

Do you cut holes in the bottom of the foil and place a drip pan underneath?

What about the bark?

What about your mop?

I assume I cook to 200 internal and then remove and place in towels and ice chest.

Any other thoughts or suggestions would be appreciated.

auheld11 if you want to finish it in the oven that is fine. I would put it in a cake pan and cover it with foil. Let the juices stay with it. Usually we foil in the 160º to 170º range. You should have your bark by then.

Once the butt is foiled you shouldn't need a mop. It will baste itself.

Usually I take mine to 200º to 205º internal temp. Let it rest for a minimum of 1 hour 2 or more may be better. I rarely use the cooler unless it will be several hours til time to eat.

Ditto on what "Pig" says.

Keep your oven at 225-250*, don't rush it!!!

Then after it reaches about 205*, let rest 2 hrs(give or take 1).

Then try this, it was a major hit on fathers day.
Let it cool in fridge overnight. Then ready your rub, 3oz cider vinegar, and 12 oz of apple juice.

To reheat use the oven or smoker(smoker is better). Every 1/2 hr - 45 min spritz w/ mix of apple juice and vinegar (1-4 ratio) and add some rub too. Mix it up, break up an big chunks and repeat this until you like how it tastes.
Freeze leftovers(if any) and it will be just as juicy as before.

Try it on a little, its good stuff!
