Ribs on the go?

Ok, I'm smoking some BB's for the 4th, and have to smoke them at my house and have them ready serve at another location after about an hour. I'm thinking of smoking them at about 220 for about four hours, then foiling them for the trip. After I arrive, I was going to brush on some finishing sauce, and heat them up to serving temperature on a gas grill. What do you think of this plan? Any other suggestions are much appreciated.

as long as the internal hits 160 before the trip(long rest) should be safe ( damn i hate talking to the health inspector).

I agree If you can get the meat out of the danger area and hit the target temp before removing it. You SHOULD be safe...biggrin.gif

4 hours for BB should be plenty and wrapping them in foil will help them to really stay moist and actually keep them cooking for probably 20 mins. of your trip before they start to cool. If you want them to really stay hot you can wrap a bath towel around them after the foil and put them in a cooler during your drive.

The results: I smoked six racks at 200-220 degrees for about 4 hours 15 minutes, and the internal temp was 165 to 175 depending on which rack I measured. I foiled them (with a little spray of apple juice) and did the towel wrap and cooler. When I took them out after almost 2 hours, they were still pretty hot. I finished them on the grill, basting and turning for about 15 minutes. Well, they turned out great, not at all overdone with just enough chew. Nice hickory flavor, but not overly smoky. Everyone loved them. I will surely do this method again.
