Decided to do a chicken and a fatty today. Smoked em with apple wood at 230 for 2.5 hours and then up to 300 for almost an hour. Nice and moist. I took a 2 pound jimmy dean log and cut in half then rolled each half. Piled some shredded cheese and garlic on one half the covered it with the other half and rolled. Super Fatty...

Can't think of a better combination than Whole Chicken and Stuffed Fatty.

One tip.....put your tem probe near the thigh joint on the chickens. The breast tends to cook faster than the thigh joint area.

Thanks for the tip on the probe location, Watery Eyes. I figured it would be the other way around...

And yes, gypsyseagod, I am addicted to the fatty now! I forgot to mention in the OP that I tried out Crazyhorse's SC Mustard sauce too. That is very tasty!
